While I am in LiveView I can change the shutter/ISO/aperture, etc. and it appears that the exposure shows correctly. However, the picture that appears after the camera processes the image is VERY far off from what it should be. The exposure is very bright. What am I doing wrong?

Are you looking at the image on the screen or the histogram before taking the image?
If you are not useing the histogram for exposure you need to start doing so.
